I haven't had a chance to look at the professions yet because of school and Overwatch, but I'm looking for data on how mats will be accumulated if they're any different. I wasn't empowered to take advantage of the AH wave earlier in the expansion and so there wasn't time to catch up and I'd like to try and hop the wave sooner. This may not be easy and so I'm not going to push very hard, but more gold in the bank means more to spend on BoE gear and other things.

For an idea of mats --

Engineering
50 "gathering" mats (ore, leather, cloth)
1-2 x3 of vendor mats

Cooking
5 "gathering" mats (fish, meat, etc.)
1-5 (x1-3) vendor mats

These are the only two that I've checked out so far.

As for what I have gathered -- I'm a hair under 108. I have gathered less than 50 cloth, 270 of one ore, 60 of another, different fish ranging from 10-50, then a handful of additional materials all of which I have less than 10 of. Except for Unbroken Teeth, because grabbing wolf packs in Stormhelm and melting them down with fire was super easy for some leveling and got me tons of their teeth.

Less than 50 cloth in 8 levels. That's horrifying.

Some of the meats have been used in having Nomi try and discover new recipes, but I'm talking maybe 20-30 total spread in 5s across a few different meats/fish.
